Sugar Cookies

From Dorothy McNett's recipes at A very simple and delicious cookie...decorate as desired or just eat them plain! Makes about 19 - 20 cookies, about 2 1/2 - 3 inches in diameter.

1/2 cup unsalted butter (1 stick), softened
1/4 cup raw sugar
1/4 teaspoon fine sea salt
1 egg
1 1/2 teaspoons vanilla bean paste, or vanilla extract
1 1/2 cups unbleached all purpose flour

Place the butter in a glass batter bowl and allow to stand at room temperature to soften, or place in microwave on half power (power level 5) for about 1 minute to soften but not to melt it. When butter is soft, with a spatula or spoon blend in the sugar and salt to make a nice smooth mixture and then blend in the egg and vanilla and blend totally. Blend in the flour to make a nice stiff and smooth dough. Preheat oven to 350 degrees and line 2 baking sheets with silicone mats or parchment paper. Using a 1 tablespoon measuring spoon, shape dough into balls and flatten each out to about 1/4 inch thickness. Bake about 12 - 15 minutes or until bottoms are browned but the tops are still creamy colored. Place on cooling racks to cool completely and then decorate as desired.
