Salt Cod Fish Cakes ala Newfoundland

Fromm Dorothy McNetet's recipes at Nice and traditional served with Pease Pudding.

1 pound dried salt cod (boned ones!)
4 russet potatoes
1 medium onion, finely diced
1/4 teaspoon pepper
1 - 2 tablespoons unsalted butter
1 - 2 tablespoons extra virgin olive oil

Soak the cod in enough water to cover, overnight or 8 hours. Drain and now cook in fresh water to cover, about 10 minutes. In meantime, peel and roughly chop the potatoes and place in a glass or ceramic bowl, sprinkle on about 1 tablespoon of water, cover with a lid or plate (no plastic) and cook in microwave about 10 - 12 minutes or more, or until potatoes are tender when pierced with a fork. Mash the potatoes, adding the drained chopped cooked cod, the chopped onion, and pepper. With hands shape into about 16 - 18 patties about 1/4 inch thick. Heat 1 tablespoon butter and 1 tablespoon oil in a heavy bottomed fry pan (cast iron is great here) and fry the patties about 2 minutes per side until nicely browned, adding more butter and oil as needed. Arrange on a serving platter. Serve with Pease Pudding.
