Jam Jams of Newfoundland

1 cup unsalted butter, softened
1/2 cup molasses
1/2 cup raw sugar
1 egg
1 teaspoon baking soda
3 tablespoons hot water
1/2 teaspoon sea salt
1 teaspoon real vanilla extract, or vanilla bean paste
2 1/2 - 3 cups all purpose unbleached flour
1/2 - 3/4 cup raspberry or lingonberry jam

Preheat oven to 350 degrees. In batter bowl soften the butter in microwave on half power for about 30 - 45 seconds but no not let it melt. Blend in molasses and sugar and then beat in the egg, baking soda, hot water, salt and vanilla. Stir in the flour to make a nice stiff dough to roll out. Lightly sprinkle more flour on work surface and roll out the dough to about 1/8th inch thick. Using a round cookie cutter, about 1 1/2 inch to 2 inch, cut into circles. Place on silicone lined baking sheets amd bake 8 - 10 minutes or until lightly browned and done. Cool. When cool, sandwich them together with the jam. Then you have Jam-Jams!!
