Pease Pudding

From Dorothy McNett's recipes at Mash and serve with roasted duck or other roasts as desired.

1 pound split green or yellow peas
1 medium sized potato, finely chopped
1 onion, finely chopped
several fresh thyme, basil, parsley leaves...
1/2 teaspoon sea salt
1/4 teaspoon pepper
1/4 - 1/2 teaspoon ground cloves (or 2 whole cloves)
water to cover
1 tablespoon unsalted butter

In heavy bottomed stock pot combine the peas, chopped potato and onion, herbs, salt, pepper and cloves. Add enough water to cover. Bring to a boil, reduce to a simmer and cover. Simmer about 45 - 60 minutes, adding more water if necessary. When done, cool slightly and then mash everything adding the butter. Serve with cooked ham, roasts of all sorts, chicken, etc, etc. etc......
