Hot dogs and grilled potatoes! 1 - 2 Yukon gold potatoes Slice and cut potatoes, red pepper and onion into slices and then strips. Heat olive oil in a cast iron pan or other large skillet and toss in and "grill" the potatoes for a few minutes, and then add the strips of bell pepper,, onion, and sliced garlic. Cook on medium low heat, stirring to keep from burning but to get them nicely browned. Sprinkle with salt and pepper. Remove from pan and set aside. Warm the hot dogs thoroughly to grill them. Then brush the cut sides of buns with a bit of oil and lightly toast them with the cut sides down. Place buns on serving plate, put hot dog on and then coat generously with the grilled vegetables.
