Sour Cream and Mustard Applesauce Salad
From Dorothy McNett's recipes at www.dorothymcnett.com. Great served with spicy foods like mole, tacos, etc. The sweet of the apples and the sour of the cream is a good mix on your taste buds!
2 large apples, cored
Cut apples into wedges. Place in glass or ceramic dish. Cover with a glass or ceramic lid, or a piece of waxed paper. Cook in microwave 5 minutes, or until apples are done. Mash with a potato masher or fork. Whisk in sour cream and mustard. Serve as a condiment with pork, roast beef, game, or poultry. Also makes a great salad dressing over greens, fennel, potatoes, cabbage, etc.
