Chicken Savoy ala New Jersey

1 chicken, 3 - 4 pounds
salt and pepper for seasoning chicken
1 - 2 tablespoons olive oil or grapeseed oil
4 - 5 cloves garlic
1/3 cup finely grated Pecorino cheese
3 tablespoons extra virgin olive oil
1 tablespoon dried oregano
1 teaspoon dried thyme

1 cup red wine vinegar

Preheat oven to 350 degrees. Cut the chicken into pieces and season with salt and pepper, rubbing over the skin. In 10-12 inch skillet (cast iron is great here, but any nice heavy bottomed skillet will work nicely) heat the oil and then cook the chicken pieces 6 - 8 minutes to brown a bit. In meantime, in food processor with steel chopping blade in place, whirl the garlic, Pecorino, olive oil, oregano and thyme to make a paste. When chicken pieces are browned a bit, smear them with the herb paste and place the pan into the hot oven and bake about 25 - 30 minutes. When chicken is done, remove the pieces to a platter. Place the hot pan on hot burner and stir in the vinegar, using a silicone spatula to cook and stir up any browned bits, etc and to make a nice drizzling sauce. Drizzle over the chicken and serve.
