New York Buffalo Wings Baked

From Dorothy McNett's recipes at www.dorothymcnett.com. Fried buffalo wings are the most common in New york City, but this baked version is now getting to be very popular as well and is very easy to make and to eat as well!!

about 15 - 20 or so chicken wings
2 cloves garlic, very finely minced
3/4 cup all purpose unbleached flour
1/2 teaspoon cayenne pepper
1/2 teaspoon fine sea salt
1/2 cup melted unsalted butter
1/2 cup hot pepper sauce (such as The Pepper Plant California Hot Sauce, or Franks' RedHot Sauce...)

Very thoroughly pat dry the chicken wings with paper towels. In a large bowl or pan combine together the finely minced garlic, flour, cayenne, and salt and toss in the chicken wings to coat thoroughly. Cover. Refrigerate at least 1 hour, or overnight. When ready to cook, preheat oven to 400 degrees. Whisk together the melted butter and hot sauce. Dip the wings into it and place on a silicone lined baking sheet with sides. Bake for 20 minutes, and then gently turn each wing over. Bake another 20 - 25 minutes or until nicely cooked but not burned. Serve warm or cooled, let people pick them up and munch and munch!
