Split Pea Soup ala London
From Dorothy McNett's recipes at www.dorothymcnett.com. One of many version...use green split peas or any other color!
2 cups green split peas
Rinse the peas and place in a heavy bottomed soup pot and cover with the water. Soak overnight or at least 2 - 3 hours. When ready to cook, add the ham hock, bay leaves, diced carrots and onion and celery and simmer for about 1 hour. Remove the ham hock and slice off any of the meat and add to the soup but discard the bone and the bay leaves. Add the broth and milk and bring to serving temperature, adding salt and pepper as desired.
