Bubble and Squeak

From Dorothy McNett's recipes at www.dorothymcnett.com. It is the sound! Cook it so that it bubbles and squeaks a bit and then serve and eat!!! Many time also ham is added. It is basically scrambled cooked potatoes with cabbage but with s special touch!

3 cups baked potatoes, cooled and thinly sliced
1/2 - 3/4 medium head of cabbage
3 - 4 slices bacon, diced
1 medium onion, very thinly sliced
1 tablespoon unsalted butter
1/2 teaspoon paprika
salt and pepper for sprinkling on top at serving time, as desired

Use some leftover cooked potatoes or cook 2 - 3 medium sized ones in the microwave or roast them in an over. When cool enough to handle, peel and mash them and measure out about 3 cups or so. Set aside. Thinly slice or dice the cabbage and place in a glass or ceramic batter bowl, cover with a glass or ceramic plate and cook in microwave about 5 - 6 minutes. Set aside. In a heavy bottomed skillet (cast iron is great here!) cook the bacon and onion together. Add the butter and the cooked cabbage and sliced or mashed potatoes and paprika. Cook over medium heat until browned on the bottom (and it is bubbling and squeaking a bit). Turn over (like making a pancake) and cook until browned on that side. Serve!
