E'LA OTA (Tahitian Marinated Tuna)

From Dorothy McNett's recipes at www.dorothymcnett.com. Use only the freshest and highest grade of tuna.

1 - 1 1/2 pounds fresh high grade tuna (or other firm very fresh fish as available)
1/2 cup lime juice (2 - 3 limes) plus some of the zest
1/4 cup coconut milk
1 small cucumber, cut into 1/2 inch cubes
1 tomato, diced
3 - 4 green onions, diced
1/4 teaspoon sea salt
1/4 teaspoon freshly ground pepper

Cut the tuna into 1/2 inch cubes and place in a glass or ceramic bowl. Zest one of the limes and add to the tuna. Measure out 1/2 cup of the juice and add to the bowl along with the remaining infredients. Marinate at cool room temperature 20 - 30 minutes. This is traditionally served in a large clam shell, or other beautiful bowls or plates as an appetizer or a salad, or a main dish with lots of rice, etc.
