Tahitian Ham Saute

From Dorothy McNett's recipes at www.dorothymcnett.com. Ann old favorite recipe from Tahiti, and it uses a can of fruit cocktail! You can substitute other fruits as desired if you wish! Nice served with ham or other noodles, or bread etc. or serve it just the way it is.

1 1/2 cups cooked ham, slivered (about 1/2 pound or so)
1 teaspoon unsalted butter
1 can fruit cocktail, juices and all
1/2 diced green pepper (or use all of it!)
1/2 cup chicken or vegetable broth
1 1/2 tablespoon raw sugar
1 teaspoon prepared mustard
1/8 teaspoon ginger
dash of freshly ground pepper
1 teaspoon soy sauce
2 tablespoons sherry or water
1 tablespoon cornstarch

In a wok or stir fry pan or other large skillet, heat the sliced ham with the butter about 2 minutes and then add the fruit cocktail and juices, diced green pepper, broth, sugar, mustard, ginger, pepper and soy sauce. Cook and stir over medium heat several minutes to get it all nice and hot. Whisk together the sherry and cornstarch in a small bowl and then blend it into the ham mixture, cooking and stirring several minutes. Serve! Nice over cooked rice or noodles but also delicious served as a vegetable dish.
