Harvest Medley over Greens

1 onion, peeled and cut into wedges
Cut onion into wedges. Core and wedge apples. Drizzle small amount of extra-virgin olive oil into sauté pan. Sauté onions and apples together until onion begins to become translucent and apples begin to brown, about 5 minutes or so. Cut up sausages and add to apples and onions and cook until warmed through, about 3 minutes. In meantime tear up the lettuce and place in a beautiful salad bowl. Toss in the sausage mixture and serve as a salad, or over cooked rice or pasta for a deluxe main dish.
