Fresh Greens with Rich Butter Dressing

From Dorothy McNett's recipes at www.dorothymcnett.com. Monet was not a big salad fan as such, but liked his fresh greens topped with a rich creamy dressing and lots of ground pepper.

1/2 cup unsalted butter
2 shallots, finely minced
1 teaspoon white wine vinegar
1/2 teaspoon sea salt
1/2 teaspoon freshly ground pepper

fresh greens as available and desired

Melt the butter in a saucepan with the finely minced shallots, vinegar, salt and pepper, do not let it boil. Set aside to cool. Carefully wash and "dry" the greens and place in a bowl or on individual salad plates. Toss with the dressing and serve. Monet would use lots more pepper, so add more if you wish!
