Spring Into Spring Salad

Frolm Dorothy McNett's recipes at www.dorothymcnett.com. Another salad, of course using fresh and local ingredients as much as possible! Eat your greens!!!

3 - 4 cups baby spinach, and other greens as available and desired
3 - 4 fresh radishes
3 - 6 green onions
8 - 10 cherry tomatoes
1 avocado
8 - 10 fresh strawberries
2 tablespoons each of hemp seeds, pumpkin seeds, sunflower seeds, etc.
1/4 cup first cold pressed extra virgin olive oil
1 - 2 tablespoons red or white vinegar
zest and juice of small lemon
1/4 - 1/2 teaspoon dijon mustard
1/4 teaspoon sea salt
freshly ground pepper as desired

In beautiful salad bowl combine greens, sliced radishes, sliced green onions, halved cherry tomatoes, sliced avocado and sliced berries and toss in the seeds. In measuring
cup whisk together the olive oil, vinegar, zest and lemon juice, mustard, salt and pepper and drizzle over greens, toss and serve! Cheers!!
