Salad Shirazi

From Dorothy McNett's recipes at www.dorothymcnett .com.

1 nice long English cucumber
2 red ripe tomatoes
1/2 medium sized red onion
1/2 red or green bell pepper, or a smaller spicy hot one
1/4 cup finely chopped fresh cilanto
zest and juice of 1 - 2 limes (about 1/4 cup of lime juice)
4 tablespoons extra virgin olive oil
1/2 teaspoon sea salt
1/4 teaspoon freshly ground pepper

Peel the cucumber if desired, or it it is nice and fresh leave it on. Thinly slice or dice, or shread it and place in a beautiful salad bowl. Dice the tomatoes and the red onion and the pepper and add to the bowl along with the chopped cilantro. In a glass measuring cup whisk together the zest and juice of the lime, olive oil, salt and pepper. Toss into the salad and chill a few hours or serve righit now!
