Olive Cheese Wedges

From Dorothy McNett's recipes at www.dorothymcnett.com. A great appetizer or main dish! Use different olives each time for a new and different look and taste!

1 teaspoon extra virgin olive oil
1 teaspoon paprika
3 large eggs
1 cup milk
1/2 teaspoon fine sea salt
1/2 teaspoon ground cumin
1 cup pitted olives, drained and coarsely chopped
3 cups shredded cheese, such as Cheddar or Swiss, etc.
freshly minced chives or green onions
romaine leaves or other crisp greens for serving

In a glass or ceramic round quice or pie dish, brush on the oil and then sprinkle with the paprika. In batter bowl whisk together the eggs, milk, salt and cumin powder. Blend in olives and cheese and pour into the prepared baking dish. Cook in microwave on full power for 3 minutes and then on medium high (power level 7) for about 11 - 12 minutes, or until mixture has set up. Sprinkle on the chives or green onions. Serve hot, warm, or cold! Nice served on crispy lettuce greens.
