Lychee Dessert Sauce

From Dorothy McNett's recipes at www.dorothymcnett.com. Great served over sliced fresh fruits,especially bananas. Also nice over vanilla ice cream! Or, just eat it!

1/4 cup raw sugar
1 tablespoon cornstarch
1/8 teaspoon fine sea salt
1 can lychees (16 - 20 ounces)
1 tablespoon unsalted butter
1 - 2 tablespoons minced candied ginger
zest and juice of 1 lime

sliced fruits (bananas), ice cream, etc.....

In heavy bottomed saucepan, whisk together the sugar, cornstarch and salt. Drain and measure out the syrup from the lychees, having 1 cup syrup, adding water or other fruit juices if necesary to make the 1 cup of liquid. Whisk the syrup, butter and candied ginger in and cook and stir over medium high heat until sauce bubbles and thickens (about 2 minutes). Remove from heat and stir in the lychees, zest and juice of the lime. Set aside to cool and serve!!!
