Lightly whisk the eggs and blend them in along with the mayonnaise, mustard, Worcestershire and Old Bay Seasoning (or other herbs and spices as desired). Shape into 8 - 10 round flat cakes. In a heavy bottomed skillet heat the butter or oil to a nice medium heat. Fry the cakes until crusty and browned on both sides. Serve with celery, carrots, crackers and etc. for a grand appetizer.
