Maine Crab Cake Appetizers

From Dorothy McNett's recipes at www.dorothymcnett.com.

1 pound crab meat, coarsely chopped or diced
1/2 cup dry bread crumbs
2 eggs
2 tablespoons mayonnaise
1 teaspoon Dijon mustard
1 teaspoon Worcestershire sauce
1 tablespoon Old Bay Seasoning
pinches of sea salt (depends on the seasoning used)
2 - 3 tablespoons unsalted butter or extra virgin olive oil

fresh celery sticks, carrot sticks, crackers, etc for serving as desired

In batter bowl combine crab and bread crumbs. Lightly whisk the eggs and blend them in along with the mayonnaise, mustard, Worcestershire and Old Bay Seasoning (or other herbs and spices as desired). Shape into 8 - 10 round flat cakes. In a heavy bottomed skillet heat the butter or oil to a nice medium heat. Fry the cakes until crusty and browned on both sides. Serve with celery, carrots, crackers and etc. for a grand appetizer. Or, serve as a nice main dish!
