Feast of Lanterns Salad
From Dorothy McNett's recipes at www.dorothymcnett.com. As this area grew with the ever increasing new people, so did the incoming variety of vegetables, fruits, seasonings and more! Just create and call it a salad!!!
fresh greens of all sorts
1 avocado, peeled and diced
fresh basil leaves, cilantro, etc.
zest of 1 - 2 limes
1/4 - 1/3 cup lime juice
1 - 2 tablespoons local honey
1/4 teaspoon sea salt
1/4 teaspoon ground coriander
1/4 teaspoon ground cumin
pinch of cayenne pepper, as desired
1/3 - 1/2 cup avocado oil or extra virgin olive oil, or a combo
Prepare the greens and put into a beautiful salad bowl along with the avocado and herb leaves. Set aside. In a glass measuring cup whisk together the zest, juice, honey, salt, spices and pepper along with the avocado or olive oil to make a great dressing. Toss into greens and serve!
