Bacon and Spinach

From Dorothy McNett's recipes at www.dorothymcnett.com. This is great served hot as a vegetable dish, or chilled as a salad.

3 - 4 slices bacon
fresh spinach, about 3 - 4 cups or so
1/4 cup melted butter, or use extra virgin olive oil
1 tablespoon apple cider vinegar, or other vinegar as desired
sprinkles of salt and pepper, as desired

Arrange bacon between paper towels on a glass or ceramic plate or bowl. Cook in microwave using about 1 minute per strip of bacon as your guide. Or cook the bacon in a frying pan until done. Save about 1 tablespoon of the bacon fat and set the bacon aside. In meantime, pile the fresh spinach in a batter bowl and cover with a glass or ceramic plate and cook in microwave 3 - 4 minutes. Crumble the bacon and add to the spinach. In a measuring cup whisk together the melted butter or oil and the vinegar and pinches of salt and pepper along with the reserved bacon fat. Stir into the spinach and serve!
