Fried Green Tomatoes

From Dorothy McNett's recipes at www.dorothymcnett.com. Here is one very easy way to fry some green tomatoes!

2 - 3 green tomatoes
1/4 cup extra virgin olive oil
1/4 cup all purpose unbleached flour
1/4 teaspoon sea salt
a few grindings of pepper
1/4 cup milk or half and half
1/4 cup dry bread crumbs, or cracker crumbs, or cornmeal
2 - 3 tablespoons unsalted butter for frying

Wash and trim but do not peel the tomatoes. Slice them about 1/4 inch thick. Dip them into the olive oil to coat, and then dip into the flour, salt and pepper. Then dip them into the milk and into the bread crumbs. Place on a flat surface while you heat the butter in a nice heavy bottomed skillet. (cast iron is great for this). When butter is nice and hot but not browning, arrange tomato slices in a single layer and cook gently about 2 - 3 minutes and then turn them over and cook another 2 - 3 minutes. Repeat with the remaining slices, adding more butter to the pan if needed. Great served hot, or let them cool and put into a salad, or sandwiches, or.......
