Kohlrabi Bake

From Dorothy McNett's recipes at www.dorothymcnett.com. Very typical Bavarian recipe. If no kohlrabi is available, use asparagus or turnips.

1/4 cup unsalted butter
2 - 3 kohlrabi, peeled or not peeled
2 - 3 tablespoons fresh thyme, snipped
3/4 cup creme fraiche
1 tablespoon German style mustard (horseradish in it!)
sprinkles of salt and pepper
1 cup bread crumbs
1/3 cup freshly grated cheese such as Parmesan
2 - 3 tablespoons freshly snipped parsley

Preheat oven to 425 degrees. Melt the butter and pour into a gratin or baking dish, casserole, etc. Slice the kohlrabi (peel if desired but is not necessary) in about 1/2 inch slices and then cut into strips and arrange in the buttered baking pan. Sprinkle with the fresh thyme. In a glass measuring cup combine the creme fraiche and the mustard and heat in microwave about 1 - 2 minutes, or heat in a small saucepan but do not let it boil, just get it nice and hot. Stir well and then drizzle over the kohlrabi. In a bowl combine the salt, pepper, bread crumbs and grated cheese. Scatter it over the top and snip on some of the fresh parsley. Bake 15 - 20 minutes or until the top is golden brown and sauce is a bit bubbly on the edges, etc. Remove from oven, allow to stand about 5 - 10 minutes and then sprinkle with more parsley and serve.
