Gosky Patties

From Dorothy McNett's recipes at www.dorothymcnett.com. My version of Edward Lear's recipe for Gosky Patties!

1 1/2 pounds lean ground pork
2 slices whole wheat bread, crumbled
2 tablespoons all purpose unbleached flour
1 medium onion, finely diced
2 - 3 tablespoons snipped fresh parsley or other herbs
1/2 cup catsup
1/2 cup shredded Cheshire cheese
1/2 teaspoon sea salt
freshly ground pepper
more flour for dredging
paprika
1 - 2 tablespoons butter or oil for frying

In batter bowl combine the ground pork, crumbled bread slices, flour, diced onion, snipped herbs, catsup, cheese, salt and pepper and then shape into meat balls and dredge with just enough flour to help hold them in shape and are not sticky. Sprinkle with some paprika. Heat a heavy bottomed saute or fry pan over medium high heat, adding the butter or oil. When pan is hot but not smoking, add enough meatballs to fit comfortably without crowding. Cook gently 2 - 3 minutes, rotating as necessary. Repeat until all have been cooked and then EAT!!!
