Pomegranate and Radicchio Salad

From Dorothy McNett's recipes at www.dorothymcnett.com. Locally grown vegetables as much as possible!

3 - 4 radicchio
3 - 4 cups fresh spinach
1/2 (or more...up to you!) red onion, very thinly sliced
2 - 3 cloves garlic, finely minced
1/2 cup California walnuts, chopped a bit
1/2 cup or so of feta cheese, crumbled
the seeds from 1 fresh pomegranate
1 persimmon, cut into slices
2 - 3 tablespoons extra virgin olive oil
1/4 - 1/2 teaspoon sea salt
freshly ground pepper, as desired

Wash, dry and tear the radiccios and spinach into nice salad sized serving pieces and place in a large salad bowl. Add the sliced onion, garlic, walnuts and feta cheese. Add the pomegranate seeds and the sliced persimmon and toss nicely. In measuring cup, whisk together the olive oil, salt and pepper and toss into the salad. Serve now or chill 2 - 3 hours or so if needed.
