Blueberry and Banana Muffins / Dessert

From Dorothy McNett's recipes at Fruit and flour! A great start for the New Year! Makes a wonderful dessert to serve with more fruits and a bit of ice cream, or whipped cream if desired!

2 - 3 very ripe bananas, mashed (1 1/2 cups)
1/4 cup raw sugar
1/3 cup extra virgin olive oil
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon fine sea salt
1 1/2 cups unbleached all purpose flour (or use gluten free flour)
1 cup blueberries

Lightly spread a bit of oil into muffin pan and set aside. Preheat oven to 375 degrees. Mash and measure the bananas and put 1 1/2 cups of the pulp into batter bowl. Blend in the sugar, olive oil, baking powder, soda and salt and then gently fold in the flour. Fold in the blueberries. Spoon the batter into the prepared muffin pan and bake 20 - 25 minutes until golden brown. Cool a bit and serve!
