Strawberry Cobbler Nice and FRESH!!

From Dorothy McNett's recipes at When those wonderful strawberries and nice and fresh in season, make this dessert! And is also nice served with ice cream, etc!!

1/2 cup unsalted butter
4 cups fresh strawberries, sliced if large ones
1 - 2 tablespoons crystalline candied ginger, if desired
1 cup raw sugar
2 teaspoons baking powder
1/2 teaspoon sea salt
1 cup unbleached all purpose flour
1 teaspoon pure vanilla extract
1 cup milk

more fresh berries or slices of Cheddar or ice cream, etc. serving

Put the butter in a 9 by 13 inch baking dish. Put it into a cold oven, and preheat to 350 degrees. This melts the butter nicely while heating the dish. Slice the berries if needed, leaving some of the small ones whole and place in a bowl along with the candied ginger and set aside. In a batter bowl whisk together the sugar, baking powder, salt, and flour. Add the milk with the vanilla extract and mix well. Batter will be thin. When the butter has melted and the oven has sreached 350 degrees, pour the batter all at once into the hot baking dish and then pour the berries and any collected juices over the batter but do not stir. Bake for 50 - 60 minutes, or until the batter is done and the top is golden brown. Serve hot, warm or at room temperature, using some fresh berries, a little bit of Cheddar, or ice cream for serving!
