Tomato Beef Stir-Fry

From Dorothy McNett's recipes at Just so easy and quick that you will never ever have to say "I have no time to cook!". Can be served as an appetizer, or as a main dish, or as a side dish, or even chilled and tossed into a salad!

3/4 pound lean beef steak, cut into 1 1/2 inch wide strips across the grain and about 1/8 inch thick
1 tablespoon cornstarch
1-2 tablespoons grapeseed oil
2 green onions, slivered
2-3 cloves garlic, sliced
1-2 red ripe tomatoes, sliced
1-2 tablespoons oyster sauce or soy sauce, salsa, etc.

Dredge the beef slices with cornstarch. Heat the oil in a wok or skillet, and then quickly add the beef strips, green onions, and garlic. Stir fry 2 - 3 minutes, or until beef is done. Add the tomato slices and the oyster sauce or soy sauce and heat through. Serve as is, or over rice or beans, etc.
