Easy Manicotti

8 oz. manicotti shells
2 cups ricotta cheese
1 1/2 cups shredded mozzarella cheese, or Gouda
1/4 cup Parmigiano-Reggiano, grated
1 egg
snipped fresh parsley, oregano, and basil
3 cups good quality marinara sauce

Combine filling ingredients and stuff mixture into uncooked manicotti shells. Arrange in a glass or ceramic baking dish and then pour sauce over the shells, making sure all are covered with the sauce. Cover. Microwave on high for 10 minutes, then on half power for 30-40 minutes, or until noodles are tender. Sprinkle with cheese or parsley and serve.
