Mexican Celebration Cookies

From Dorothy McNett's recipes at www.dorothymcnett.com. There is history that this type of sweet morsel traveled over the border with the Mexican cowboys. Wish I had their exact recipes!

1 cup powdered sugar
1 cup unsalted butter, room temperature
1 teaspoon real vanilla extract
2 cups all purpose unbleached flour
1/8 teaspoon salt
1 cup finely chopped pecans or walnuts

Preheat oven to 325 degrees. Cream butter and sugar, and then add remaining ingredients. Roll into 36 balls, placing 1 inch apart on ungreased baking sheets. Bake about 12- 15 minutes. Roll the warm cookies in additional sugar.
