Cabbage or Cauliflower Slaw

From Dorothy McNett's Recipe Book at www.dorothymcnett.com. Substitute apple cider vinegar for the white vinegar, which will take your taste buds back to the early 1900's!

1 small head cabbage, shredded (or 1 head cauliflower, raw or cooked)
1/2 onion, shredded (or slivered green onions)
1 carrot or parsnip, shredded

1/4 cup crystalline brown sugar (Sugar in the Raw)
1 tablespoon all purpose unbleached flour
1/2 to 1 teaspoon good quality dry mustard
1/4 teaspoon sweet paprika
1/2 teaspoon fine sea salt
1 egg
1/2 cup white vinegar
1/2 cup water
2 tablespoons butter

Combine cabbage, onion, and carrot in salad bowl and chill. Combine remaining ingredients in batter bowl and whisk well. Microwave on high for 2 minutes. Whisk well. Microwave another 2-3 minutes, or until thickened. Pour over the vegetable mixture. Serve immediately, or chill completely. Add radishes, broccoli, savoy cabbage, green onions, and more as desired!
