Cabbage Slaw

From Dorothy McNett's recipes at Use red or green cabbage, or a combination.

1 small head cabbage, shredded (or 1 head cauliflower, raw or cooked)
1/2 onion, shredded (or slivered green onions)
1 - 2 apples, cut into small cubes

1/4 cup raw sugar
1 tablespoon all purpose unbleached flour
1/2 to 1 teaspoon good quality dry mustard
1/2 - 1 teaspoon horseradish (horseradish cream in a jar)
1/4 teaspoon sweet paprika
1/2 teaspoon fine sea salt
1 egg
1/2 cup apple cider vinegar
1/2 cup water
2 tablespoons butter

Combine cabbage, onion, and apples in salad bowl and chill. Combine remaining ingredients in glass or ceramic batter bowl and whisk well. Cook in microwave 2 minutes. Whisk well. Cook another 2-3 minutes, or until thickened. Allow to cool a few minutes, and then pour over the vegetable mixture. Serve immediately, or chill completely.
