Cottage Fried Potatoes

1/4 cup oil (use 1/2 butter and 1/2 oil)
4 cups uncooked sliced potatoes
1 teaspoon salt
1/4 teaspoon black pepper

Heat oil in a heavy skillet until a drop of water sizzles, then add potatoes, salt, and pepper. Cover and cook 10 minutes, stirring occasionally. Reduce the heat, uncover, and cook about 15 minutes, or until crisp and golden.
