Dumpling Soup

From Dorothy McNett's recipes at www.dorothymcnett.com. Serve to your special valentine, the special dumpling in your life!

1/4 cup unsalted butter
2 eggs, separated
1/2 teaspoon sea salt
1 tablespoon minced parsley
1/4 teaspoon nutmeg
2 1/2 cups bread crumbs
4 cups good quality beef broth, or other broth as desired

In batter bowl, cream the butter. Add egg yolks, salt, parsley and nutmeg. Add the crumbs and beaten egg whites. With hands dipped in flour, roll dough into little balls the size of a walnut. Cook slowly, uncovered, in beef broth for 10 minutes.
