Quick and Tasty Meatloaf

1 pound lean meat
2-3 slices whole wheat bread
1/2 red or green bell pepper
1 medium onion
1-2 cloves garlic
1-2 sprigs fresh parsley
1/2 cup tomato sauce or catsup, or barbecue sauce
1/2 teaspoon pepper

1/4 cup catsup
1 tablespoon good quality prepared mustard

In processor with steel chopping blade in place, combine bread, green pepper, onion, garlic, and parsley. Chop finely. In a bowl, combine the meat with the chopped ingredients, adding the sauce and pepper. Loosely pack mixture into glass or ceramic ring mold or loaf pan. Combine catsup and mustard and spread over the meat. Microwave, uncovered, at medium high for 12-15 minutes. Allow to stand several minutes or up to half hour before slicing. It is softer than one cooked in a conventional oven and may be a little harder to slice nicely as it does tend to crumble.
