Meat Loaf
From Dorothy McNett's recipes at www.dorothymcnett.com. This makes a smaller meat loaf than most recipes, serves about 4-5. It doubles easily so make more if necessary.
1 pound lean ground beef (ground round steak) 1-2 tablespoons horseradish 2 tablespoons catsup 1/2 teaspoon sea salt 1/4 teaspoon freshly ground black pepper 1/2 cup half and half or low-fat milk, your choice 1/2 medium onion, finely chopped 3-6 cloves garlic 1 teaspoon Italian seasonings, or use some dried basil, thyme, and oregano 1 cup broken up crackers, plus 1/4 cup more for the top 1/2 cup beef or vegetable broth (optional but keeps it moist and flavorful)
chopped fresh parsley and tomatoes, for garnish oven roasted potatoes or squash
Preheat oven to 350 degrees. Combine ground meat, horseradish, catsup, salt, pepper and half and half or milk in a bowl. Finely chop onion and garlic. Add to the meat mixture along with the seasonings and the 1 cup of cracker crumbs. Mold the mixture into a loaf shape in a shallow baking pan and sprinkle it with the chopped cracker crumbs. Pour broth into the pan, if using. Bake for about 1 hour, adding more liquid, if necessary. Garnish with chopped parsley and sliced tomatoes. The flavor combination is great with oven roasted vegetables.
