Garlicy Prawns

1 pound fresh prawns, deveined and peeled
1 tablespoon butter
2 tablespoons extra-virgin olive oil
4 - 8 cloves garlic, minced or sliced
1/8 teaspoon freshly ground white pepper
1/4 teaspoon hot spicy seasoning (cayenne, or New Orleans mix)
1/4 cup freshly snipped parsley
2-3 tablespoons grated Parmigiano-Reggiano cheese, or other flavorful grated hard cheese

Wash and devein the shrimp by slitting down the back with a sharp knife and pulling out the vein. Remove the shell, if desired, but leave at least some of the shell on the tail. Set aside. In batter bowl, combine butter, olive oil, and garlic. Microwave on high for 1 minute. Add remaining ingredients and cover with waxed paper. Microwave on high for 2 minutes. Stir. Microwave another 1-2 minutes, or until the shrimp turn pink. Do not overcook! Serve immediately, or chill and serve as an appetizer with a salad, etc.
Or, if desired, use a heavy bottomed fry pan. Heat the butter, oil, and garlic 1-2 min. Add remaining ingredients and cook and stir over medium high heat 3-4 minutes, or until prawns are done. Do not overcook!!
