Fresh Fruit Dressing for Salad Greens

From Dorothy McNett's recipes at www.dorothymcnett.com. Use peaches or apricots or really ripe pears and drizzle over wedges of freshly sliced cantalope and garnish with snipped cilantro. Use as a dip for crackers, chips, vegetable sticks...I make this often with various fruits of the season and it is always wonderful. The fruit must be very ripe, sweet and soft for best results.

2 very ripe peaches or other fresh fruits of the season
1 clove garlic
1/4 teaspoon sea salt
1/4 teaspoon white pepper
3 tablespoons light vinegar (wine vinegar, champagne vinegar, etc.)
4 tablespoons extra-virgin olive oil
pinch of sugar (depends on the sweetness of the fruit)

washed and dried fresh greens
sliced peaches or pears...
other herbs and greens as desired...
cooked legumes or beans as desired...

Put the very ripe fruit and garlic in food processor with steel chopping blade in place. Process until fruit and garlic are pureed. Add the salt, pepper, vinegar, and oil and process just to blend. Taste, and add sugar as needed.
Use with Central Coast baby greens, along with other fruits, nuts and vegetables as desired..
