Muffins ala Apples

1 small apple
2 cups unbleached all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
3/4 teaspoon sea salt
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/2 cup raw sugar
1 large egg
1 cup apple juice or cider
1/4 cup olive oil, or melted butter
1/2 cup coarsely chopped walnuts

Position rack in center of oven, and preheat to 400 degrees. Lightly oil a muffin pan and set aside. Chop unpeeled apple and set aside. In batter bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon and cloves. Add sugar and stir lightly to blend, making a well in center. In another bowl, whisk the egg, apple juice, and oil or butter. Beat thoroughly, and add to flour mixture, stirring only until flour is moistened. Add walnuts and apple. Spoon into prepared muffin pans. Bake for 20-25 minutes. Leave in pan for 5 minutes, then turn onto cooling rack and cool slightly. Serve warm with maple butter or other desired jams or jellies. Makes about 12 muffins.
