Apricot or Peach Chutney

From Dorothy McNett's recipes at www.dorothymcnett.com. This can be stored in refrigerator 3-4 weeks or more.

7-8 medium sized firm, ripe apricots or peaches
1/4 cup raisins
1/4 cup dates, chopped
1/2 cup white vinegar or apple cider vinegar
1 lemon
1 cup raw sugar
1-2 tablespoons candied ginger, coarsely chopped
1/4 cup chopped walnuts

Cut apricots or peaches in half and remove pit. Cut out any blemishes and cut into smaller pieces and put into a glass or ceramic batter bowl. Add raisins, dates, and vinegar. Quarter lemon, remove seeds, and slice very thin. Add to mixture and cook in microwave 5 minutes. Stir. Add sugar and stir. Cook 5 minutes more, stir. Apricots should be cooked and sugar dissolved. If not, cook another 2-3 minutes. Add ginger and nuts. Allow to stand at least 30 minutes as it will set up as it cools. Serve as a condiment with ham, lamb, fish, or grilled vegetables.
