Broiled Apricots with Fresh Mozzarella

From Dorothy McNett's Recipe Book at Appetizers, or salad companion, or side dish with main dishes!

apricot halves
raw sugar
unsalted butter

Preheat broiler. Place apricot halves on non-stick pan and sprinkle with sugar and cinnamon. Dot with a little butter, if desired. Broil for several minutes, or until apricots are hot and sugar is starting to caramelize. Arrange on serving platter and place a mozzarella ball in each. A great garnish for meat, ham, lamb, or chicken dishes, especially those with a curry flavor.
