Grilled Burgers with Fabulous Shallot Sauce

From Dorothy McNett's recipes at www.dorothymcnett.com. Use any type of ground meat you wish, or even a combination of ground chicken with ground beef, etc. And, a vegetable burger is wonderful with this shallot sauce. Experiment and enjoy!

1 pound (more or less) lean ground beef (try using 1/2 beef and 1/2 turkey)
1/2 teaspoon fine sea salt, unless the seasoning spice is salted
1/2 teaspoon Grilling Spice, or other peppery dry spice blend

2-3 shallots, sliced
1 - 2 cloves garlic, minced
2 tablespoons extra-virgin olive oil
3/4 cup dry red wine
1/4 teaspoon each salt and pepper
2-3 fresh thyme sprigs, snipped

buns or bread slices, as desired
fresh local baby greens, as desired

Mix the salt and grilling spice with the ground meat and shape into 3-4 patties. For an interesting effect, make up a batch of ground beef and a batch of ground turkey. When shaping the patties, use turkey for one half and beef for the other. Grill over hot coals, or on the stove-top grill until done to your liking. In meantime, combine sliced shallots, garlic, olive oil,wine, salt, pepper and thyme in saucepan and cook over medium heat until mixture has reduced by half or more. To serve, arrange the patties over the buns. Drizzle sauce over the top, and garnish with more snipped thyme. Either serve open faced or sandwich style, loaded up with the fresh baby greens and more sauce.
