Ozark Pie ... AKA California Apple and Nut Dessert!

From Dorothy McNett's recipes at www.dorothymcnett.com. Not a pie, not a cake but a fabulous dessert. I am not sure how it got the name "pie" but it is fun to call it that when served as it brings up great conversations regarding foods and their regional names. Guess you had to be from the Ozarks! In my updated version, I also add 2 - 3 tablespoons cocoa nibs. Serve with a drizzle of Cream Sherry or Port wine for a special touch.

3 eggs
1 1/4 cups raw sugar
1 teaspoon vanilla extract or vanilla bean paste
2/3 cup unbleached all purpose flour
2 1/2 teaspoons baking powder
1/2 teaspoon sea salt
3/4 - 1 cup chopped walnuts or other nuts as desired, or a combo
2 - 3 tablespoons cocoa nibs if desired
1 1/2 cups chopped apples (2 medium apples)

Preheat oven to 350 degrees. Lightly oil or butter a 9 by 13 inch baking pan and set aside. In batter bowl, whisk the eggs, sugar, and vanilla. In a small bowl, whisk the flour, baking powder and salt and then stir it into the egg mixture. Add chopped nuts and apples. (and cocoa nibs, if using also) Bake 35-40 min. Cool in pan, and then spoon out servings onto beautiful plates and drizzle a tad bit of Cream Sherry or Port along side, if desired.
