Rice with Herbs and Miso

From Dorothy McNett's recipes at www.dorothymcnett.com. Try using miso more often as a fabulous addition to any cooked grains, rice, salad dressings and more. It adds lots of nutritional value as well as spicy saltiness.

1 cup rice (long or short grain, white or brown)
2 cups water, or a combination of broth and water, or all broth
1/4 teaspoon pepper
1 tablespoon snipped fresh chives or green onions
1 teaspoon snipped fresh oregano
1 tablespoon miso
few drops of water or broth or wine...

Combine rice, water, pepper, chives and oregano in rice cooker or heavy bottomed sauce pan with a lid. Bring to boil, reduce to medium simmer and cook covered about 20 minutes or more, or until rice is done. (OR, combine rice, water, pepper, chives and oregano in glass or ceramic 8 cup batter bowl. Cover. Cook in microwave for 5 minutes, then on half power (power level 5) for 10 minutes.) Test for doneness. Allow to stand, covered, for about 5 minutes. Add a few drops of water or broth to the miso to make it spreadable and add to the warm rice. Stir well. Serve.
