Salmon with Capers and Greens

From Dorothy McNett's recipes at www.dorothymcnett.com. This is also wonderful with any of the ready to use fish seasonings or rubs.

1-2 fresh salmon fillets or steaks
2-3 teaspoons flour
1/2 teaspoon fine sea salt
1/4 teaspoon white pepper
Sweet or smokey paprika
2 -3 teaspoons olive oil
2 tablespoons lemon juice or white wine or sherry
1-2 teaspoons capers, more if desired
fresh lettuce and other greens for serving

Pat the fish dry with paper towels. Brush with a little olive oil and then sprinkle with the flour, salt, pepper and paprika. (or use a good quality fish rub). Heat a heavy bottomed saute pan, adding the oil after about 30 seconds. Heat about 1 minute and then add the fish. Cook on medium high heat 2-3 minutes. Do not let the pan get too hot, the oil should not be smoking. Carefully turn the fish and cook 1-2 minutes, or until done. Do not overcook! Remove fish to a plate. Quickly add lemon juice to the pan, add some capers and cook and stir just a little to make a drizzling sauce. White wine is good to add, as well! Drizzle sauce over fish and serve over a plate of fresh lettuce or other greens.
