Pātes Aux Herbes

large pinch of sea salt
3/4 cup mixed fresh herbs and/or salad greens
3 cups all-purpose unbleached flour
2 eggs
3-4 tablespoons warm water
1 tablespoon extra virgin olive oil

Parmesan cheese to grate at the table
unsalted butter, room temperature
freshly ground pepper (nice to put the mill on the table for serving)

In food processor with steel chopping blade in place, chop herbs and salt to form a paste. Add flour, and with motor running, add the eggs, warm water and olive oil to form a soft but manageable dough. Process to knead the dough about 30 seconds. Roll out, preferable using a pasta roller, to about 1/8 inch thick. Cut into strips about 1 1/2 inches wide and cut across strips to make squares. Bring a large pot of water to a boil, add about 1/2 teaspoon salt and a little oil, and when the water returns to a full boil, add the pasta squares and cook gently until tender, about 4-6 minutes. Drain and serve in warmed soup plates and offer cheese, butter, and pepper at the table.
