Chocolate Covered Fresh Fruits
From Dorothy McNett's recipes at www.dorothymcnett.com. One coating of chocolate is quick and easy. Double dipping is also easy, and very spectacular.
slices of fresh apples or other fruits, whole strawberries, etc. very dry if just washed
Place chocolate in a two-cup glass measuring cup and melt in microwave for 30 seconds. Stir. Microwave another 20-30 seconds, and stir until melted. Holding a paper towel in one hand, pat the whole berry or slices of fruit dry from any clinging water or juices and then dip into the melted chocolate. Place on waxed paper or a silicone mat, sprinkle with just a few grains of coarse sea salt or finely diced dried fruits and allow to harden. If double dipping with another color of chocolate, allow the first layer of chocolate to completely harden, which takes about 15 minutes. Then, double dip away! These should be eaten within 4-5 hours of dipping, or they turn funny looking.
