Basic Chocolate Truffles

from Dorothy McNett's Recipe book at

1 pound chocolate, any color or flavor
1/2 cup cream, or creamy liquid
1/2 pound contrasting color coating chocolate
Assorted chopped nuts, cocoa powder, powdered sugar, crushed chocolate, etc.

Combine the 1 pound of chocolate and the cream in the batter bowl. Microwave on High one minute. Stir. Microwave another 20-30 seconds, if necessary, to finish the melting. Stir well. If adding any oil based flavorings, add them now. Refrigerate several hours, or until you can shape the mixture into balls. Microwave the remaining 1/2 pound of chocolate on High for one minute. Stir to melt. Dip each ball of truffle mixture into the melted chocolate and place on waxed paper to harden. Decorate as desired.
