Serve these on New Years Day for good luck. 3 cups dry black-eyed peas Rinse peas. In a 6 quart heavy bottomed pan, combine water and peas. Bring to boiling, simmer 2 minutes. Remove from heat and let stand 1 hour. Add remaining ingredients and bring to boil. Cover. Simmer gently about 1 1/2 hours, or until peas are tender. Remove bay leaf.
