Midwestern Black-Eyed Peas And Ham Hocks

From Dorothy McNett's Recipe Book at www.dorothymcnett.com. Serve these on New Years Day for good luck.

3 cups dry black-eyed peas
12 cups water

1-2 smoked ham hocks
1 cup chopped celery
1 teaspoon salt
1/4 teaspoon cayenne or Zip
1 bay leaf

Rinse peas. In a 6 quart heavy bottomed pan, combine water and peas. Bring to boiling, simmer 2 minutes. Remove from heat and let stand 1 hour. Add remaining ingredients and bring to boil. Cover. Simmer gently about 1 1/2 hours, or until peas are tender. Remove bay leaf. Serve in bowls with biscuits on the side, and you will have a whole year of good luck.
