Baked Cheese Appetizer

From Dorothy McNett's recipes at

1 8 oz. package cream cheese

1 small fresh tomato, or 1 pkg. sliced dried tomatoes
2 tablespoons olive oil
3 cloves garlic, minced
1/4 cup water or white wine (use 1/2 cup if using dried tomatoes)
pinch of salt and pepper
green onions, sliced, for garnish
plenty of crisp crackers, or slices of French bread

Place the cream cheese on an oven safe glass or ceramic plate or glass pie dish. Bake at 325 degrees for 30-40 minutes, or just until it is beginning to darken slightly. In meantime, in a saucepan combine the olive oil and garlic. Cook for about 1 min., then add the tomatoes, chopped, and the water, salt, and pepper. Simmer for 3-4 min., or until mixture blends together. Allow to stand. When cheese is done, pour the sauce over it and serve with the crackers, garnished with the green onion slices.
